it goes without saying kale salad

Here is a guideline for a kale salad I have been enjoying lately. I use the word “guideline” because I don’t measure. I just eyeball. It’s a salad after all, not a bomb. It’s so liberating to eyeball.

It goes without saying that if you must measure, this recipe probably won’t work for you.

Be sure to put everything into the bowl after you cut it up and then eat out of that bowl.

Serves 1.

chopped onion

2 radishes, quartered and sliced

1/2 a bunch of Lacinato kale

big handful of tamari pumpkin seeds

1 small avocado, if you only have large ones, use 1/2

lemon juice

salt & pepper, to taste

1. Chop the onion. I used spring onion. But you can use any kind you like. If you don’t like onion, leave it out. It goes without saying that you add or delete what you want here. It’s your salad after all. (The backbone of this salad is the kale, avocado, lemon, salt and pepper.) It looks like I chopped a large handful for this salad.

2. Quarter and slice the radishes. I like the radishes because they provide crunch and color. And they are spicy. If you don’t like spicy, it goes without saying to use something that’s crunchy that you like. I’ve used apple before and it’s good.

3. De-stem the kale & cut in a chiffonade.

4. Throw in a handful of pumpkin seeds. Feel free to substitute with any nut you like as long as they are in small pieces.

5. Cut the avocado in half and scoop all the flesh into the bowl.

6. Squeeze some lemon juice on top. I used 1/4 lemon.

7. Add the salt and pepper, to taste.

Now comes the fun part. Plunge your hands into the bowl and mix it up with your hands, rubbing the avocado on everything. Take a couple of minutes to coat the kale well. Add more lemon juice if you don’t like the consistency. If you suffer from tactile defensiveness, it goes without saying that this salad isn’t for you.

The kale breaks down when it sits for a while, and it tastes even better. I imagine you could take this salad to your cubicle with you, if you made it the night before or the morning of work.

I’ve added dried cranberries to this salad before, and they are quite yummy.
